Breads - all our artisan breads are based on three basic ingredients: flour, water and salt and contain no preservatives. The majority of our breads begin with our Starter which contains only natural yeast strains and gets its flavour from friendly bacterium unique to Brasserie Bread. Some of our traditional Italian bread is made with a pre-ferment, which is a portion of fermented dough that is mixed into each batch of dough and contains some commercial yeast. Our award winning Sourdough is made exclusively with Australian organic flour and Brasserie Bread's 12 year old Starter. All of our breads use a very slow, natural fermentation technique that allows the flavour to fully develop and the crust to have a beautiful look and texture.

Pastries - all of our laminated pastry doughs are handmade using traditional French and Danish techniques. Brasserie Bread pastries are made with the finest quality butter and contain no preservatives. The leavening in the laminated doughs is derived mainly from the steam generated by the moisture in the butter during baking. As the steam expands it lifts and separates the individual layers, making the laminating process critical to quality of the pastry.

Cakes - Brasserie Bread's beautiful handmade individual portion cakes are baked fresh every day. We only use pure butter and the highest quality ingredients including Belgian chocolate.

Pane Croccante - a large, flat, crisp bread inspired by the culinary heritage of Italy's Piedmont region. Skillfully prepared by hand and using only natural ingredients, the quality and freshness of the bread is guaranteed. The result is a light crisp Pane Croccante, an ideal companion for cheese, pate and wine.
