Justin Park from Big Tree House Cafe was formerly head chef at Peter Doyle’s at The Quay. Now open for about a year, the Rydalmere cafe is a gem in a residential area. Fitted out with a wooden theme, the cafe name was inspired from the tree in the back courtyard. Seating under the tree in the sun is also available.

Using good ingredients is essential. With coffee by Campos and bread by Brasserie Bread, Justin ensures the food and drinks are high in quality. Sourcing fresh and local produce and making everything from scratch is of the utmost importance. Justin remarks that it’s traditional breakfast food, but organic where possible.

Goats on toast is simplicity at its finest. Brasserie Bread’s harvest grain sourdough toast is spread with French goats cheese, then strewn with organic cashews, almonds, pepitas, sunflower seeds, and finally drizzled with honey. This is the perfect balance of sweet, salty, and tart. It’s a winner in terms of the different textures. And the harvest grain sourdough is the perfect base, especially because of its sesame crust adding crunch.

A decadently delicious brunch pick is the brioche French toast with berries, maple syrup and vanilla mascarpone. Brasserie Bread’s buttery brioche is the basis of this dish.

Still on the brioche front, the breakfast burger is made with our brioche burger bun, filled with egg, lettuce, bacon, tomato, avocado salsa, cheese, and tomato relish. It’s the ultimate breakfast choice, and what really hits the spot is the tasty avocado salsa.
