Our new barista Laura not only pours a mean cup of coffee, but sometimes she also rides to work on a unicycle. I don’t think you can say that about a lot of baristas! Every single morning she makes me an amazing soy cap – frankly, I’m not sure what I’d do without her!
Here’s what Laura has to say about Brasserie Bread, piccolo lattes and customer interaction.
What got you into coffee?
I started drinking coffee when I was 16, and that’s how I became interested in learning how to make it. I think a coffee can be an important part of someone’s day whether it’s morning or afternoon – I like being a part of that.
What do you like about working at Brasserie Bread?
It’s refreshing to come to work every day. I know that I’ll enjoy myself and the combination of staff and customer rapport makes it enjoyable.
What’s your favourite coffee?
I drink strong long blacks. But I like to make piccolo lattes because they’re cute like me… (she bursts into laughter, which tapers off into a giggle).
What’s your take on Brasserie Bread customers?
I think they understand that consistency is just as important as quality. They come for the coffee and they care about the interaction – that’s why they keep coming back.
What’s the perfect accompaniment for coffee?
Our chocolate & walnut brownie!
I can’t fault her. That brownie is melt-in-your-mouth perfect. Next time you’re stopping by for a caffeine fix, say hi to Laura (and order yourself a brownie to go with your coffee)!

I can’t wait to come in and try a cute piccolo latte accompanied by laughter that tapers off into a giggle! Also I would love to see Laura make coffee whilst riding a unicycle.

It’s definitely a good combination! Or try the banana bread or apricot tart – those are my favourites!
