A short course designed exclusively for Brasserie Bread wholesale customers aimed at bread education of foodservice personnel.

Course cost: FREE for wholesale customers, Max 10 students per course

Duration: 2 Hours

    • Pastry kitchen
  2. Artisan Bread - Principles and Techniques:
    • Starter
    • Ingredients
    • Mixing
    • Proving / Retarding
    • Hand-moulding
    • Baking
  3. Taste Testing:
    • Understanding crust, crumb structure and taste of breads
  4. Preparation and Storage techniques
  5. Patisserie overview
    • Ingredients Selection and patisserie production techniques
    • Pastry Lamination
    • Sampling of pastries (French, Danish, Brioche), cakes and tarts

We will provide:
