There’s a lot to know about Brasserie Bread sourdough, so we’re not surprised we receive a tonne of questions asking to know all there is. Below we’ve addressed some of our most frequently asked questions so you can know a little bit more about the loaves you love.

Why does it take three days to make sourdough?

Some good things take time and our sourdough is no exception! Making one sourdough loaf, from start to finish, takes three days. But why? The entire process from feeding the starter to fermentation and then proving takes time. Of course, you could make a sourdough in much less time, but that means we’d also be sacrificing our unique flavour profile and crumb structure. Are there any preservatives in my bread?

Our bread is 100% free of additives and preservatives. It’s important that we use only natural ingredients so that we create bread that is as close to purity as possible. This means we only bring you the highest quality in sourdough.

What makes sourdough sour?

That unique flavour of sourdough is often described as being ‘sour’. But what is this? This comes from the lactic and acetic acid that develops during the fermentation process.

Is your bread organic?

No – in fact, we use single origin flour that is natural, sustainably grown, traceable and 100% Australian. We made this choice because it has a higher protein content, more flavour, connects us directly to the farmers, and it’s better for the soil and the environment.

How do I store my bread?

This depends on how quickly you plan on using your bread. If you know you’re not going to eat it all within three days we recommend to freezing it. Otherwise keep it sealed in its original bag or a breadbox away from any drafts or direct sunlight. Find out more about storing for success here!
